one more



Sorry I just had to try out this new polaroid photo thing I downloaded. It looks so cute! Here are some pictures of the little flowers John and I are growing in the house. They are seeds that Svein gave us of all the flowers he grew last year in Ballard. I hope they do well here. So far I haven't killed them, so that's a good start!


And one more for good measure :) Doesn't he look SO happy?

Salmon



So 2 nights ago John and I made salmon for dinner. There was WAY too much leftover, since I don't really love "meat" (I know this is seafood)... and I just wasn't that hungry for some reason. Anyway since we had so much extra, I decided to make my mom's salmon quiche for dinner the next night. It came out super good, and I had so much salmon I was able to make another quiche, bake it and put it in the freezer for a future dinner! Here is the recipe for anyone interested. It is really easy!



Salmon Quiche

1 (15oz.) can salmon (my mom always used leftover salmon and I did too- just add what you think looks good)
3 eggs
1 cup sour cream
1/4 cup mayo
1/2 cup shredded cheddar cheese
1 Tbsp. grated onion ( Its not that much, but I didn't add any since I didn't have onion and don't love them)
1/4 tsp. dill weed
3 drops liquid smoke (My mom adds more, I think I used a capful? The caps are pretty small) Don't leave this ingredient out- its important!
1 piecrust ( I just bought a frozen premade one at the store- don't bake before hand)


Directions:

Drain salmon (if using canned) flake, and set aside

In a bowl, blend the eggs, sour cream and mayo. Stir in salmon, cheese, onion, dill weed, and liquid smoke.
Spoon filling into crust
Bake at 400 degrees for 45 minutes or until firm in the center.

* I had to cover up the crust with tin foil about half way through baking to make sure it didn't burn.

Chex Mix

*This isn't my chex mix, but from the chex mix website.

So everyone I talk to knows I am pretty obsessed with chex mix lately. It all started when Jennifer and Darrick to visit and she brought some homemade stuff. It is SO much better than the stuff you buy in the store! She does things a little different than the original recipe, so I will include what she does.


Here is the recipe from the chex mix site:


Original chex mix


3 cups Corn Chex® cereal
3cups Rice Chex® cereal
3cups Wheat Chex® cereal
1cup mixed nuts ( I use peanuts, since thats what John asked for)
1cup bite-size pretzels (I haven't used these in mine yet)
1cup garlic-flavor bite-size bagel chips or regular-size bagel chips, broken into 1-inch pieces
6tablespoons butter or margarine
2tablespoons Worcestershire sauce
1 1/2teaspoons seasoned salt
3/4teaspoon garlic powder
1/2teaspoon onion powder


Directions:


Oven Directions Heat oven to 250°F. ( Jennifer says its better to heat to 270, so thats what I do) In large bowl, mix cereals, nuts, pretzels and bagel chips; set aside. In ungreased large roasting pan, melt butter in oven. ( I just melt it in the microwave with seasoning and mix into the chex mix ) Stir in seasonings. Gradually stir in cereal mixture until evenly coated. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool, about 15 minutes. Store in airtight container.


* Jennifer also adds a little extra worcestershire sauce, so I do that too. It comes out great every time. John loves it and its a nice snack to bring to work!

Here it goes!

Well, this is my first attempt at a blog. I'm hoping I can keep everyone up to date on the progress of our first baby and anything else going on in our lives!

As far as the baby goes, my big ultrasound is scheduled for Wednesday May 13th at 1pm. We are very excited to find out if we are going to have a little Olivia or a ... (no boy name yet!)
